Carrot and Sunflower Seed Surprise

Ingredients

1 large onion finely chopped

2 1/2 cups sliced carrots

3/4 cup water

1 tablespoon honey (or 1 teaspoon Nature Sweet Sugar Substitute)

1/4 cup cooked rice or soy grits (ground soy beans)

2 heaped tablespoons finely chopped dill

1/4 cup sunflower seeds

2 egg whites lightly beaten

1/4 cup chopped almonds

Freshly ground black pepper

Sea salt to taste

Directions

Preheat the oven to 175°C (350°F).

Place onion and water in a saucepan and bring to a boil, add carrots and cover.

Simmer until carrots are tender.

Stir in all the other ingredients with the exception of the almonds.

Pour into a shallow baking dish, sprinkle with almonds and bake in the oven for 20 minutes.
